Mango Crepe

I love to go to this place that serves crepes. The idea of making a mango crepe took shape as we were discussing mango mania. My kids loved this creation, hope yours will enjoy it too. This is our fifth recipe in the Mango Mania Series.


For Mango filling
- 1 mango peeled and diced
- 3/4 cup mango pulp
- 3-4 tsp sugar
For crepe
- 3/4 cup pancake mix (substitute it with Maida or flour and 1/4 tsp baking powder)
- 1 egg
- 1 tbsp oil
- 3/4 cup milk

- Ghee or butter


How To Make:

In a pan heat the diced mango, mango pulp and sugar. Stir the mixture continuously until it thickens. Set it aside.

Beat the egg, milk and oil. Add the pancake mix. Heat griddle on medium heat and use ghee or butter to grease. Pour about 1/4 cup batter and spread it on the griddle to make thin crepe (dosas or thin pancakes). Cook the crepe for about 2 minutes or until the bottom is lightly browned. Turn it over and cook for about 30 seconds. Remove it and give the crepe a cut using the spatula all the way to the center. Spread about 1 tbsp of the filling on the crepe and fold it over.

Makes about 6 crepes.
