Healthy Tres Leches Cake: Rich in Omega-3

My family loves cakes! While the kids will eat pretty much any kind of cake with sugary icing, my husband’s favorite is the Tres Leches Cake (cake with 3 milks). But here is the problem…most cakes are just sugar and empty calories. So I always look for ways to add some nutrition without sacrificing the taste. This Omega-3 rich cake that has cut down significantly on sugar will do the trick. So relax, sit back and enjoy!

Ingredients:

-       1 pack store bought white cake mix (makes two 9x9 inch cakes)

-       1 can of evaporated milk (12 oz)

-       ½ cup whole milk

-       ½ cup flax milk (if you cannot find flax milk, substitute with additional whole milk)

-       2 cups chopped strawberries or halved raspberries/blackberries

-       Whipped topping (optional)

-       2 tbsp flax seed powder

How To Make:

Bake the cake (or two 9x9 cakes) as per directions on the package or use the recipe below, just mix the flax seed powder in the batter. Once the cake is done, let it cool to room temperature. Poke many small holes in the cake with a tooth pick or with a paring knife. Pour the evaporated, whole and flax milk evenly on top of the cake. You will see that the cake will absorb all the milk within a few minutes. If desired, spread some whipped topping and refrigerate the cake at least for 3 to 4 hours before serving. Garnish each piece with fresh berries or fresh berry sauce right before serving.

‘Bake from scratch’ White Cake Recipe

-       1 cup white sugar

-       1/2 cup butter

-       2 eggs

-       2 teaspoons vanilla extract

-       1 1/2 cups all-purpose flour

-       1 3/4 teaspoons baking powder

-       1/2 cup milk

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners. In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan. Bake for 30 to 40 minutes in the preheated oven.

Apple Kesari

Apple KesariIngredients
Sooji---1cup
Sugar----2 cups
Milk-----1 1/2 cup
Apple------ 2
Cardomom powder---1/2 tsp
Ghee------100gms
Cashew and Raisins for Garnishing
Food color a pinch

Clean apple ,remove skin and blend it with 1/2 cup milk  in a blender and extract the juice. In a pan roast sooji till the raw smell disappears  with 1 tsp ghee. Keep aside. in the same, add 1 cup of milk and 2 cups of water and bring it to boil. when boiling add the sooji and stir well without lumps. when it started to cook add sugar, and let it melts .after 5 min of boiling add apple juice and dissolve food colour in a tsp of milk and add to that and bring to thick consistency. add 2tbsp of ghee. When it becomes thick ,stir well .it should not stick to bottom of the pan. that is the good consistency ,add cardomom powder now .transfer to serving bowl and garnish with raisins and cashews. serve hot.
Note: you can replace Mango for apple.

Cranberry Fluff

cranberry fluffIngredients:
- 1 lb Fresh Cranberries
- 2 cup sugar
- 1 orange
- 1 cup red grapes (halved)
- 1/2 cup chopped pecans
- 1 cup cool whip
- 1 cup miniature marshmallows
 
How To Make;
Coarsely grind cranberries and orange together. Add sugar and let set overnight in the refrigerator. Next morning, drain the cranberry mixture. Add chopped pecans and cut grapes, mix together and return to refrigerator. Just before serving, add cool whip and marshmallows and mix well. Goes well as a side dish on Thanksgiving menu.

Fresh Berry SauceIngredients:
- 1 cup fresh, halved raspberries
- 2 cups fresh, quartered strawberries
- 1/2 cup sugar
- 1 tsp fresh orange zest
 
How To Make:
Mix up the berries and orange zest. Start heating in a sauce pan on medium heat. When the berries become soft and mushy, add the sugar and let the mixture boil. Then turn theFresh Berry Sauce heat low and simmer for 5 more minutes. Turn off the heat and let it cool to room temperature. Store in the refrigerator in an air tight container. Enjoy it as a topping on cakes, ice creams, waffles and pancakes. Mix it up with a dash or fresh lemon juice, olive oil, salt and pepper to make a fresh salad dressing.
