Khamang Kakdi (Cucumber Salad)

Ingredients :

Cucumber - 1 big

Coriander leaves - 1 tablespoon finely chopped

Sugar - few pinches

Shredded coconut - 1 ½ Tablespoon

Peanut Power - 1 Tablesoon

Lemon Juice - ½ Teaspoon

Salt - as per taste

For Tempering -

1 Teaspoon Oil

Few mustard seeds

Pinch of asafoetida (hing)

Green Chili (cut into big pieces)

How To Make:

Peel the cucumber skin and chop in finely or grate it. Leave for 10 minutes and squeeze it to take out extra water.

Add salt, sugar, shredded coconut, peanut powder, lemon juice and coriander leaves.

For Tempering -

Heat the oil and add mustard seeds. As they splutter, add green chillies and asafoetida. Turf off the heat and pour it on cucumber and mix it well.

For fasting : Use Ghee (clarified butter) and cumin seeds. Do not use asafoetida (it is usually not eaten on a fasting day)
