Vegetable Macaroni

Vegetable Macorni



This dish is a Indian twist to a traditional Macorni. This is cooked the same way as we prepare vegetable upma.



Ingredients :


Cooked Wheat Macorni - 2 Cups

Chpped Onion - ¼ Cup

Chopped Roma Tomatoes - ½ Cup

Garlic Powder - ½ Teaspoon

Red Chillie Powder - ½ Teaspoon


OR


Green Chillies - 2 Nos.(vertically slit)

Mixed Vegetables - 1 Cup

Salt - As per taste

Olive Oil - 1½ Tablespoon

Lemon Juice - ½ Teaspoon

Parmesan Cheese - 1 Tablespoon



How to Make :



Heat the oil. Add onions and sauté it until they are translucent. Add tomatoes and fry for few minutes. Add mixed vegetables, salt & chillie powder. Let the vegetables cook. Once they are done, add cooked macaroni and lemon juice, mix well. Remove the pan from heat after 5 minutes.

Sprinkle chopped corainder and parmesan cheese.



Serve hot.



Variation : You can use different vegetables, like capsicums, bell peppers, baby corns, etc.
