Thin Poha Chivada

Thin Pohe ChivadaIngredients:
- 6 cups thin pohe
- 1.5 cups dalia
- 1.5 cups raw peanuts
- 1 cup dry coconut chips
- 15 to 20 curry leaves
- 4 to 5 small green chillies
- 3/4 cup vegetable or canola oil
- 3 tsp garam or kala masala
- 3 tsp salt or to taste
- 3 tsp sugar or to taste

How To Make:
Cut the green chillies into small pieces. Heat the oil on medium-high and add chillies and curry leaves. Fry till they start looking crispy. Add the peanuts and daliya, continue frying till the nuts start turning color. Add the coconut chips, masala, salt and sugar. After a couple of minutes turn off the heat and let the fried mix stand.
Meanhwile, spread the thin pohe on to a cookie sheet and heat in the oven on 350 degrees for about 10 minutes. This makes the pohe crispy. Aletrnately, you can leave them out in sunlight for a day (only if the weather is dry and sunny) or lightly roast them on tawa on low heat. Mix the pohe and the fried mix together until homogenous. You have a crispy and crunchy chivda ready!
