Lal Bhopalyachi Dhirdi (Pumpkin Pancake)

pumpkin pancakeIngredients :

Boiled Pumpkin (smashed) - 1 ½ Cups You can replace this with canned pumpkin

Rice Flour - ½ Cup

Wheat Flour - 1 ½ Cup

Milk - 1 Cup

Jaggery - ½ cup grated

Sugar - Few Tablespoons

Cardamom Powder - ½ Teaspoon

Nutmeg Powder - Few pinches

Water - As necessary to get the consistency of pancake batter

How to Make :

Mix jaggery and sugar in milk and leave it for some time. It will dissolve in the milk.

In a big bowl, mix pumpkin, rice flour, wheat flour, nutmeg powder, cardamom powder and milk.

Add water if required. It should have pancake batter like consistency.

Heat the griddle, apply oil and make pancakes.

Fry on both sides until its brown.

Serve it with Ghee.
