Seviya Upma

Ingredients:

- 3 cups vermicelli/seviya

- 1 cup mixed frozen veggies (carrot, corn, peas and beans)

- 3/4 cup finely chopped onions

- 10 – 12 curry leaves

- 1/2 tbsp grated ginger

- 3 - 4 green chillies chopped

- 1 tbsp urad dal

- 2 tbsp veg/canola oil

- 1/2 tsp cumin seeds/jeera

- 3 cups water

- 1/4 tsp mustard seeds

- 1/8 tsp hing

- 1 tsp salt

- Cilantro for garnish

 

How To Make:

Heat oil in a wok or shallow non-stick pan. Turn the heat to medium and add mustard seeds, cumin hing and urad dal. Fry until the dal turns pinkish in color. Add curry leaves, onions, chillies and ginger. Let the onions sauté until golden in color. Add the vermicelli and sauté till pinkish golden. Pour water and the mixed frozen veggies on top. Mix well, cover and let it cook on low heat until all the water is absorbed and the vermicelli is well cooked but not mushy. Serve hot with pickles or chutneys.
